Random aside: Shepherd's pie made from leftover mashed potatoes. Not really my best effort... moving on...
The ginger chunks added a nice texture, and these were buttery moist and delicious for days. Next time I may use half or even a quarter of the butter, it was THAT chewy
I like the hint o potatoes on the pie. More seasoning than proper layer :)
Ginger snaps (I wanted to put snaps in quotes) that are chewy?? A tasty paradox!
