Balls O' Energy
No cooking! Made these for a group hike with a food theme of "stuffed stuff". Really good but a little sweet - next time I might try with unsweetened coconut, less honey, or one of those (weird) natural peanut butters :)

The Good: 1 cup oats, 1 cup sweetened shredded coconut, 1/2 cup ground flaxseed
The Bad: 1/2 cup total of chocolate goodies
(for me this was a bag of M&Ms and mini chocolate chips)
The Sticky: 1/2 cup pb, 1/3 cup honey, 1 tsp vanilla.
All together now
Mix and chill in fridge for 30 minutes
Roll into balls then eat! (Or put back in fridge).
Don't be fooled by my inadequate foodtography skills, these are delicious!
